Tips on truffle preservation

Preservation methods
First of all, truffles are a product that must be consumed fresh and as soon as possible, in order to fully enjoy their authentic flavor.
The storage methods and times depend on:
- type of truffle, for example the black and black summer truffle are more resistant than the white and bianchetto which deteriorate more easily;
- size of the truffle;
- seasonality.
The main conservation methods are:
REFRIGERATOR
The shelf life is about 10 days for black truffles, unlike white truffles which is a week.
This preservation method is the most effective for preserving fresh truffles and consists of wrapping them in absorbent kitchen paper or a cotton cloth, which should be changed at least once a day to prevent the truffle from getting damp and ruining the product.
Furthermore, if you add fresh eggs to the container, these, thanks to their porous shell, will absorb the truffle aroma which will give an extra touch to your omelette.
IN OIL
Another preservation method consists of placing the truffle inside a glass jar, filling it with olive oil and keeping it in the refrigerator at a temperature between 2 and 4 degrees. This recommendation is to keep the truffle intact, without mold, for 7 to 10 days at most.
For longer-lasting preservation, you can cut fresh truffles into slices, place them in ice cube trays, cover them with oil or melted butter, and freeze them.
If you decide to use butter, it can be melted at room temperature or in a double boiler, clarifying it (removing the film that forms on the surface). If you use this method, we suggest a recipe to prepare.
This way, it will last a couple of months.
IN RICE
To use this method, you can pour the truffle into a glass jar with the rice and store it in the refrigerator. This way, the truffle will remain intact for 3-4 days, but you must be careful not to let the rice dry it out, making it too dry. One of the advantages of this preservation method is that the rice will take on the aroma of the truffle, making it a delicious dish to bring to the table.
FREEZER
The truffle, after being washed and dried properly, can be frozen whole or minced, by placing it inside a cellophane food bag.
Once the truffle is out of the freezer, it is advisable to grate or slice it, so as not to alter the desired effects and its aroma, which can be preserved for up to 12 months.
Truffles are a product that with a little imagination can make your recipe even more special and delicious.
